Santa's Healthy Cookie Recipe

There are so many delicious treats to enjoy at Christmastime, but nothing beats a batch of Santa's Cookies!

Created by The Nutrition Guy, these Oat, Ginger and Cranberry Cookies are a healthy take on a sweet favourite that you'll be making for Christmases to come.

 

Oat, Ginger and Cranberry Cookies

Makes 12 | Prep time: 10 mins | Cook time: 10-12 mins

Ingredients:

  • 100g melted butter
  • 1 tbsp golden syrup
  • ½ tsp baking soda
  • ½ cup plain flour
  • ¾ cup oats
  • ¼ cup brown sugar
  • ½ cup dried cranberries
  • 1 tsp dried ginger
  • ¼ tsp allspice

 

Method:

  1. Preheat oven to 180°C and line a baking tray with baking paper. 
  2. Add golden syrup and baking soda to butter and stir well to combine.
  3. Place the remaining ingredients in a large mixing bowl.
  4. Add the wet ingredients to the dry ingredients and stir until well combined. 
  5. Roll a small amount of mixture into balls and place on the baking tray. Leave a gap between each cookie. 
  6. Bake for 10-12 minutes and transfer to a wire rack to cool.
